La Escalivada is one of the most typical dishes of Catalan cuisine and although there are different ways of cooking it, we are going to show you how to make one of the tastiest and easiest.
The ingredients you will need are the following:
1 Garlic head
1 red pepper
Extra virgin olive oil
First of all we should wash the pepper, the tomatoes and the eggplant well. Later we will remove the outer layers of the heads of garlic and onions.
We will place all the vegetables (with the exception of the tomatoes) in a flag and we will pour a little extra virgin olive oil on them. Next we are going to add the tomatoes to the tray and we will put it in the oven preheated to 170ºC during approximately 40 minutes.
When the oven has finished its function, we will remove the tray and, once cold, we will be able to remove the skin and the seeds to the pepper and the eggplant and the outer layers of the onions to, later, chop them. Finally we remove the garlic cloves from the roasted head to finally arrange the ingredients on a plate and add a little sea salt to taste.
After completing this series of steps we will have prepared our delicious Escalivada.
